Ingredients

Instructions

  1. In a bowl, combine chopped eggs, mashed avocado, mayonnaise, Dijon mustard, and lemon juice.
  2. Mix until well combined and creamy.
  3. Season with salt and pepper to taste.
  4. Garnish with fresh herbs before serving.
  5. Enjoy on its own or served in lettuce wraps.

Keto Cauliflower Fried Rice

Ingredients

  • 1 medium head of cauliflower, grated or riced
  • 2 tablespoons coconut oil
  • 2 eggs, beaten
  • 1 cup mixed vegetables (e.g., bell peppers, peas, carrots)
  • 3 green onions, chopped
  • 2 tablespoons soy sauce or tamari
  • Salt and pepper to taste
  • Sesame oil for drizzling (optional)

Instructions

  1. Heat coconut oil in a large skillet over medium heat.
  2. Add the riced cauliflower and stir-fry for about 5 minutes until tender.
  3. Push the cauliflower to one side of the skillet and pour in the beaten eggs, scrambling until cooked.
  4. Add mixed vegetables and green onions, stirring to combine.
  5. Pour in soy sauce and season with salt and pepper to taste.
  6. Drizzle with sesame oil if desired and serve hot.
