Meal 1: Quinoa Salad

Quinoa Salad

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, chopped
  • 1/4 cup parsley, chopped
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Rinse quinoa under cold water.
  2. In a pot, bring water to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. Fluff quinoa with a fork and let it cool.
  4. In a large bowl, combine quinoa, cucumber, bell pepper, onion, and parsley.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. Pour dressing over salad and toss to combine.
  7. Serve chilled or at room temperature.

Meal 2: Vegetable Stir-Fry

Vegetable Stir-Fry

Ingredients

  • 2 cups mixed vegetables (broccoli, bell peppers, carrots)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Cooked rice or noodles for serving

Instructions

  1. Heat sesame oil in a large pan over medium heat.
  2. Add garlic and ginger, sauté for 1 minute.
  3. Add mixed vegetables and stir-fry for 5-7 minutes until tender.
  4. Pour soy sauce over the vegetables and stir to combine.
  5. Serve over cooked rice or noodles.
