Meal 1: Quinoa Salad
Ingredients
- 1 cup quinoa
- 2 cups water
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/4 cup red onion, chopped
- 1/4 cup parsley, chopped
- 2 tablespoons olive oil
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Rinse quinoa under cold water.
- In a pot, bring water to a boil, add quinoa, reduce heat, cover, and simmer for 15 minutes.
- Fluff quinoa with a fork and let it cool.
- In a large bowl, combine quinoa, cucumber, bell pepper, onion, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour dressing over salad and toss to combine.
- Serve chilled or at room temperature.
Meal 2: Vegetable Stir-Fry
Ingredients
- 2 cups mixed vegetables (broccoli, bell peppers, carrots)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 teaspoon ginger, minced
- Cooked rice or noodles for serving
Instructions
- Heat sesame oil in a large pan over medium heat.
- Add garlic and ginger, sauté for 1 minute.
- Add mixed vegetables and stir-fry for 5-7 minutes until tender.
- Pour soy sauce over the vegetables and stir to combine.
- Serve over cooked rice or noodles.
